One thing that brings me great joy in life is cooking delicious healthy meals for myself, my husband, my friends and my family. I love opening my kitchen up to people and when the people come…they help me cook, they eat and they dance! I was so excited when I saw the Ryan Montbleau Band was going to play at Nectar’s. Nectar’s is a really small venue in Burlington, Vermont that is famous for it’s gravy fries and for the fact that it’s the place that Phish got their start. It is quite magical. I called up Ryan and asked him if he would be down to come to my house before the show to help me cook some food and then eventually eat it. He took me up on my offer and the lovely Matty G joined him. I love creating dishes after the names of songs of the band members that are eating at my house so I created something called the “I Like Mine Scrambled in the Morning Frittata” after RMB’s song called “Eggs.”

I made this particular version of the frittata dairy free because RMB’s bassist Matty G does not do well with dairy. He gets major sinus issues and it effects his playing. We had a conversation a couple of years ago where I challenged him to go dairy free for 30 days to see what would happen. He felt so good, he hasn’t gone back since. The coolest part is that no one even noticed that the frittata was dairy free. It was that delicious.

During our time together cooking this dish we learned that when you have to put a frittata back in the oven because you mis-judged how long it would take to cook and you don’t want to give the band salmonella before a show, it’s called a reverse frittata. We also learned a reverse frittata can be a very rewarding sex position. Interesting!

After dinner we had a major dance party to Ryan’s new song, “Hey Man” from his new album “For Higher.” Ryan busted out some of his best moves. After our dance party at my house we moved the dance party to a packed Nectar’s and danced to the Ryan Montbleau Band right up until closing time…where Ryan couldn’t stop playing and sang two more songs. It must have been a combination of the frittata and the superfood drink I gave him before he left.

Ingredients:

6 free range eggs
1 stalk of broccoli chopped
1 onion chopped
1 tbsp rosemary
1 tbsp garlic powder
Black pepper
Sea Salt

Directions:

Preheat oven to 425 degrees
Saute onions in olive oil over medium heat until translucent (about 5 minutes)
Kiss eggs, crack them and then beat the crap out of them in a bowl
In a casserole dish combine all ingredients and mix
Place in oven for 25 minutes
Dance to “Yeah Man” from Ryan Montbleau’s new album “For Higher”
